Limoncello sorbet
Try this sorbet as an aperitif or palette cleanser for a dinner party set to impress.
INGREDIENTS:
• 2 cups of water
• 1 1/3 cups caster sugar
• 5 thick strips of lemon rind
• 1/2 cup lemon juice
• 1/2 cup Dark Horse Limoncello
• 4 lemon halves, hollowed out, frozen, to serve (optional)

METHOD:
1. Stir water, sugar and rind in a saucepan over medium-high heat. Stir for 2 minutes or until sugar dissolves. Simmer for 3 minutes. Cool.
2. Stir in lemon juice and Dark Horse Limoncello. Transfer to a jug. Cover. Place in fridge for 4 hours. Discard rind.
3. Churn in an ice cream maker for 25 minutes or until a sorbet forms. If you don’t have an ice cream maker, simply pour it into a shallow tray & place it in the freezer for 90 minutes. Remove from the freezer and scrape the mixture with a fork mixture, scraping the sides of the pan and breaking up any frozen chunks. Repeat every 90 minutes until satisfied with the texture. Continue breaking the ice cream up and stirring it for as long as you like. The longer that you whisk the ice cream and continue breaking it up as it freezes, it will create an airier or fluffier final product. Ice cream without a machine typically takes 3-4 hours to freeze to a soft-serve consistency.
4. Serve in frozen hollowed-out lemon halves, if desired.

Lemon bowls: Using a paring knife, trim off about 2 cm from the stem end of lemons. Using a teaspoon, hollow out the flesh and membranes from each lemon, capturing the juice in the bowl. Put the removed lemon flesh in a fine-mesh sieve and press against it with the back of a spoon to extract the juice. Use the juice for making the sorbet or reserve it for another use.
Trim a thin slice from the bottom end of each lemon so it will stand upright.
Line a baking sheet with parchment or waxed paper, transfer the hollowed-out lemons to the baking sheet and freeze until cold, at least 20 minutes.

Grapefruit Mint Spritz
Ingredients:

• Lime Slices/Ruby Red Grapefruit plus more for serving

For something a little different, try orange tiramisu. A tasty play on traditional tiramisu!

Dark Horse Orangecello is as versatile as it is smooth and crisp.

Use it liberally to make this delicious dessert

Ingredients

• 100 ml prepared espresso coffee (cooled)
• 160 ml Dark Horse Orangecello
• 300 ml thickened cream
• ¼ cup icing sugar mixture
• 250 g mascarpone
• ¾ cup finely grated dark chocolate, plus extra to serve
• 12 sponge fingers or savoiardi biscuits

Method

• Put espresso and Dark Horse Orangecello in a small flat ceramic dish, stirring to combine. Set aside.
• Put cream and sugar in the bowl of an electric mixer and beat until soft peaks form. Beat in mascarpone until thickened.
• Spoon 1/3 of the cream mix into the base of four 1½-cup capacity serving glasses. Top with a layer of grated chocolate. Dip 1/2 of the sponge fingers quickly into the coffee mixture (just enough to cover, not to soak), and place on top of the chocolate layer, breaking to fit. Spoon over 1/2 of the remaining cream, then repeat with a chocolate layer and dipped biscuit layer.
• Top with remaining cream and refrigerate for 15 minutes.
Serve tiramisu topped with grated chocolate.

Here's what you'll need...
• 6 unwaxed lemons

• juice of half an orange
• 4 tbsp. cold water

1. Cut the lemons in half lengthwise. Use the tip of a small sharp knife to gently separate the flesh from the pith. Hollow out the lemons with the aid of a melon baller or small spoon. Reserve the flesh of the lemons.
2. Place the lemon flesh in a fine sieve set over a bowl to catch the juice. Use your hands to squeeze as much juice as you can.
3. Put the cold water in a small bowl and sprinkle the gelatine over it. Leave it for a few minutes to swell
4. Combine the lemon juice, sugar, and orange juice in a small saucepan and slowly bring to a simmer, stirring until the sugar is dissolved. Add the gelatine and stir again over low heat until dissolved – do not allow it to boil. Take off the heat and stir in Dark Horse Limoncello.
5. Place the lemon halves in a small muffin tin to stabilise. Carefully pour in the jelly mixture, filling to the top
6. Chill in the fridge for 6-8 hours or overnight until set. Carefully cut each lemon in half lengthwise to create wedges. You might want to snip the ends with scissors to make cutting in half easier. Keep in the fridge until you are ready to serve
7. And there you have it. A guaranteed crowd-pleaser.

How to Serve Dark Horse Limoncello the Right Way!

Straight and ice-cold, directly into a shot glass is how you serve limoncello.

Ingredients:
• 40ml Dark Horse Limoncello
• 30ml gin
• 40ml lemon soda (such as San Pellegrino Limonata)
• Tonic water to top
• Lemon wheels and fresh mint to garnish

Method:
1. Pour the gin, Dark Horse Limoncello and lemon soda into a glass and top with tonic water.
2. Stir gently then add ice.
3. Garnish with lemon wheels and mint

RASPBERRY-MANGO MARGARITA

Ingredients
• 2 tbs raspberry-flavoured jelly crystals
• 2 limes
• 500g frozen mango
• 1/3 cup (80ml) Dark Horse Mango Liqueur
• 1/3 cup (80ml) Dark Horse Orange Liqueur
• 1/3 cup (80ml) Dark Horse Coffee Liqueur
• 250g frozen raspberries
• Fresh raspberries, to serve

Method
1. Place the jelly crystals on a small plate. Cut 1 small wedge from a lime. Run the lime wedge around the rim of each glass, and then dip each rim in the jelly crystals to lightly coat. Juice the remaining limes
2. Place the lime juice, mango, Dark Horse Mango Liqueur, Dark Horse Orange Liqueur& Dark Horse Coffee Liqueur in a blender and blend until smooth. Pour half the mango mixture into a large jug
3. Add frozen raspberries to the remaining mango mixture in the blender. Blend until smooth. Pour into a jug
4. Divide the mango mixture and raspberry mixture evenly among serving glasses. Use a skewer to gently marble. Top with the fresh raspberries and serve immediately

Ingredients
• 2 tbs raspberry-flavoured jelly crystals
• 2 limes
• 500g frozen mango
• 1/3 cup (80ml) Dark Horse Mango Liqueur
• 1/3 cup (80ml) Dark Horse Orange Liqueur
• 1/3 cup (80ml) Dark Horse Coffee Liqueur
• 250g frozen raspberries
• Fresh raspberries, to serve

Method
